The answer is not simple because, even in Peru, there are two opposing schools of thought... and, as a result, each Bodega offers 2 types of Pisco for preparing your cocktails!

The "purists" will recommend that you choose a Pisco called "Pure Quebranta" which is distilled, in the purest tradition, exclusively using Quebranta grapes, the very first grape variety introduced to Peru by Spanish colonists. Pisco was, therefore, invented using Quebranta grapes... but it is the least aromatic among the 8 Pisco grape varieties authorized by the official Denomination of Origin of Peru!

On the other hand, those whom we would call "modernists" will definitely tell you to prefer the so-called "Acholado" Piscos, which is a lovely word that can be translated as "Mixed race". Piscos Acholados are therefore subtle blends of grape varieties always resulting from a combination of Quebranta grapes with one or more grape varieties often called "aromatic" because their fragrance is naturally more pronounced. Each distillery performs an exclusive blend, giving each Pisco Acholado a unique aromatic identity! It is the characteristic aroma and flavour of the blended grapes that will make the difference between each Pisco Acholado.
