Ají Mirasol Chili paste is a widely used ingredient in Peruvian cuisine. It is made from ripe Ajíes Amarillos dried in the sun and ground into a paste. Ají mirasol Chili paste is used to add flavour and colour to a variety of dishes such as Aji de Gallina and Cau Cau, among others. It is also used to marinate meats, poultries and fish before cooking and to prepare stews, marinades and seasonings.

Ají Mirasol is the Yellow Ají that has gone through a process of drying in the sun, after which it receives this name. It is used to prepare dressings and season foods and sauces from Peruvian cuisine. It can be used, among others, to prepare dishes such as Aji de Gallina and Cau Cau. For the Papas a la Huancaina, Causa, Lomo Saltado, Escabeche, Cebiche and Tiradito, you should choose the Yellow Chilli Paste processed from fresh Aji Amarillo in order to preserve the flavor of the dishes.

Once opened the jar of paste, keep refrigerated.
