The Ají Limo is not one and only, but several, as this chilli pepper exists in different colours such as intense red, yellow, green, orange, white, or purple. It is mainly cultivated in humid coastal areas of Peru, up to an altitude of 1500 meters above sea level. The fruits of this pepper measure between 1 to 12 cm and can have a spherical or elongated shape with glossy skin and some wrinkles.

Ají Limo is used to add flavour and spiciness to Ceviche. It is usually thinly sliced or finely chopped before being added to the fish or seafood during the marinating process.
